  • 1/2 cup (75 g) cooked and crumbled bacon or sausage (optional, ensure it’s pre-cooked)

  1. Preheat Oven & Prep Tin: First things first, preheat your oven to 375°F (190°C). This ensures your oven is at the perfect temperature when your muffins are ready to bake, leading to even cooking. Then, grab a standard 12-cup muffin tin. Lightly but thoroughly grease each cup with cooking spray or a thin layer of oil (coconut, olive, or avocado oil work well). Don’t skimp on this step – it’s key to preventing the muffins from sticking and making cleanup a breeze. Silicone muffin liners are also an excellent alternative for guaranteed non-stick results.
  2. Mix the Eggs: In a medium-sized mixing bowl, crack the 8 large eggs. Add the 1/4 cup of milk or cream, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
