- ½ teaspoon Dijon mustard: Dijon mustard adds a tangy, sharp flavor that balances the richness of the egg yolks and olive oil. It also helps to emulsify the dressing. Dijon mustard has a distinct flavor that is crucial to Caesar dressing.
- ½ cup extra virgin olive oil: Olive oil is the base of the Caesar dressing, providing its richness and emulsifying with the egg yolks to create a creamy texture. Use a good quality extra virgin olive oil for the dressing, as its flavor will be prominent.
Instructions
- Preheat grill for indirect cooking using two-zone grilling method. Target 400 degrees F in the cooking chamber. The two-zone grilling method is crucial for grilling romaine and other delicate ingredients. It involves setting up your grill with two distinct heat zones: a direct heat zone for searing and charring, and an indirect heat zone for gentler cooking. For this recipe, we’ll primarily use the direct heat zone for a quick sear. Preheat your grill to a medium-high heat, aiming for a cooking chamber temperature of around 400 degrees Fahrenheit. If using a gas grill, turn on burners on one side to medium-high and leave the burners on the other side off. If using a charcoal grill, bank coals to one side of the grill, leaving the other side empty. This creates the two heat zones.
- Drizzle bread with olive oil (a light coating). Lightly brush or drizzle the baguette slices with extra virgin olive oil on both sides. This will help them toast up nicely on the grill and prevent them from drying out. Don’t over-oil the bread; a light coating is sufficient.
- Place the romaine hearts, lemons, and baguette slices on the grill on direct heat and cook approximately 2 minutes per side, flipping often. Stay close, these will all cook at slightly different times. Remove when the bread has a nice toast, the lemons have darkened and have a nice char (see pictures), and the romaine has a nice char (but not burnt). This is where the grilling magic happens! Carefully place the romaine hearts (cut side down), lemon halves (cut side down), and baguette slices directly over the direct heat zone of your grill. Grill for approximately 2 minutes per side, flipping frequently. It’s essential to stay close to the grill during this step, as these ingredients cook quickly and can burn easily.
- For the baguette slices: Grill until they are lightly toasted and have grill marks, about 1-2 minutes per side. They should be golden brown and slightly crispy but not burnt.
- For the lemon halves: Grill until they are slightly softened and have darkened grill marks on the cut side, about 2-3 minutes per side. The grilled lemons should be slightly caramelized and have a smoky aroma.
- For the romaine hearts: Grill until they have visible grill marks and are slightly wilted around the edges, about 1-2 minutes per side. The romaine should be slightly charred but still retain some crispness in the center. Avoid over-grilling the romaine, as it can become mushy.
Remove the grilled baguette, lemons, and romaine from the grill as they are done and set aside to cool slightly.
- Remove from grill. Serve with the Grilled Lemon Caesar Dressing, parmesan cheese, and optional proteins (we vote for crispy bacon or grilled chicken). While the grilled elements are cooling slightly, prepare the Grilled Lemon Caesar Dressing. To make the Grilled Lemon Caesar Dressing:
- In a small bowl, mash the anchovies and garlic cloves together with the kosher salt using a fork until a paste forms. This helps to release the flavors of the anchovies and garlic.
- Add the black pepper, grated parmesan cheese, grilled lemon juice (squeeze the grilled lemons while they are still warm to extract the most juice), egg yolks, and Dijon mustard to the anchovy-garlic paste. Whisk together until well combined.
- Slowly drizzle in the extra virgin olive oil while whisking constantly to emulsify the dressing. Continue whisking until the dressing is smooth, creamy, and slightly thickened. Emulsifying the dressing is crucial for achieving the desired texture. If the dressing is too thick, you can thin it out with a tablespoon or two of water. Taste and adjust seasoning with salt and pepper as needed.
To assemble the Grilled Romaine Caesar Salad:
- Chop the grilled romaine hearts into bite-sized pieces and place them in a large bowl.
- Break or cut the grilled baguette slices into crouton-sized pieces.
- Pour the Grilled Lemon Caesar Dressing over the grilled romaine and baguette croutons. Toss gently to coat everything evenly.
- Transfer the salad to serving plates or a platter.
- Garnish with extra grated parmesan cheese and your choice of optional toppings, such as crispy pancetta or bacon, grilled chicken, or grilled salmon.
