Ingredients
This recipe for No Bake Turmeric Bars is wonderfully simple, relying on a handful of wholesome ingredients that work together to create a powerhouse of flavor and nutrition. Let’s delve into each component and understand why they are so beneficial and perfect for this recipe:
For the Crust:
- ¾ cup Coconut Flour: Coconut flour forms the base of our crust, offering a naturally gluten-free and grain-free alternative to traditional wheat flour. It’s made from dried coconut meat that has been ground into a fine powder. What makes coconut flour so special? Firstly, it’s incredibly high in fiber. Fiber is essential for digestive health, helping to regulate blood sugar levels, promote feelings of fullness, and support a healthy gut microbiome. This high fiber content also contributes to the satisfying texture of these bars. Secondly, coconut flour is a good source of healthy fats, specifically medium-chain triglycerides (MCTs). MCTs are known for their potential energy-boosting properties and are easily digested by the body. Finally, coconut flour has a naturally subtle sweetness and a delicate coconut flavor that complements the other ingredients beautifully, without being overpowering. When using coconut flour, it’s important to note that it is highly absorbent. This recipe is carefully balanced to account for this absorbency, ensuring the crust isn’t dry or crumbly.
- 3 scoops Terra Origin Organic Turmeric Blend (Chai) (plus extra for garnish): This is the star ingredient that brings both vibrant color and incredible health benefits to our bars. Turmeric, the golden spice derived from the root of the Curcuma longa plant, is renowned for its powerful anti-inflammatory and antioxidant properties, primarily due to its active compound, curcumin. Inflammation is linked to a wide range of chronic diseases, and turmeric can play a crucial role in reducing inflammation in the body. Antioxidants help protect our cells from damage caused by free radicals, contributing to overall health and well-being. Using the Terra Origin Organic Turmeric Blend (Chai) adds an extra layer of flavor complexity. The “Chai” element means it’s likely pre-blended with other warming spices like ginger, cardamom, cloves, and cinnamon, which not only enhance the taste but also contribute their own unique health benefits. Ginger, for example, is known for its digestive properties and anti-nausea effects. Cardamom and cloves are also rich in antioxidants and have anti-inflammatory properties. Using a pre-made blend simplifies the recipe and ensures a balanced flavor profile. We also use extra for garnish, because a sprinkle of turmeric not only looks beautiful but also gives an extra boost of those amazing benefits in every bite. If you don’t have this specific blend, you can use plain turmeric powder and add a pinch of ginger, cinnamon, cardamom, and clove to mimic the chai spice flavor.
- 1 tsp Cinnamon (plus extra for garnish): Cinnamon is another spice powerhouse in this recipe, working in synergy with turmeric. Like turmeric, cinnamon boasts significant antioxidant and anti-inflammatory properties. It’s also known for its ability to help regulate blood sugar levels, which is particularly beneficial in a dessert recipe. Cinnamon adds a warm, sweet, and slightly spicy flavor that beautifully complements the earthy notes of turmeric and the richness of almond butter. Beyond flavor and health benefits, cinnamon simply makes these bars smell and taste incredibly comforting and inviting. The aroma of cinnamon baking (even though we’re not actually baking!) is instantly mood-boosting. We use cinnamon both in the crust to infuse it with flavor and as a garnish to add a visual appeal and an extra aromatic touch. Just like with turmeric, a sprinkle of cinnamon on top elevates both the taste and the presentation.
- 2 cups Almond Butter (note: use 100% almond butter with no added oils): Almond butter is the creamy, nutty heart of these bars. It provides healthy fats, protein, and fiber, making these bars satisfying and energy-sustaining. It’s crucial to use 100% almond butter with no added oils, sugar, or salt. Many commercially available almond butters contain added ingredients that can detract from the health benefits and alter the flavor. Check the ingredient list and ensure it simply lists “almonds.” The natural oils present in almonds are healthy monounsaturated fats, which are beneficial for heart health. Almond butter also contributes a wonderful creamy texture and a rich, nutty flavor that binds the crust together and complements the spices perfectly. It’s a fantastic source of vitamin E, magnesium, and calcium as well. Using almond butter as the primary binder makes these bars naturally dairy-free and adds a significant nutritional boost. If you are allergic to almonds, you could potentially substitute with other nut butters like cashew butter or sunflower seed butter, keeping in mind that the flavor profile will slightly change.
- ½ cup Maple Syrup: Maple syrup is our natural sweetener in this recipe, replacing refined sugars and adding a touch of delicious sweetness. Pure maple syrup is derived from the sap of maple trees and, unlike refined sugar, it contains some minerals and antioxidants. While it’s still a form of sugar and should be consumed in moderation, it’s a more natural and less processed option compared to white sugar or high-fructose corn syrup. Maple syrup has a distinctive caramel-like flavor that pairs exceptionally well with almond butter, turmeric, and cinnamon. It adds moisture to the crust and helps to bind the ingredients together. When choosing maple syrup, opt for pure maple syrup and consider the grade. Darker grades of maple syrup often have a more robust flavor, which can be lovely in this recipe. If you prefer, you could experiment with other natural liquid sweeteners like honey or agave nectar, but maple syrup really enhances the overall flavor profile of these turmeric bars.
For the Filling:
- 2 cups Sugar-Free Chocolate Chips (I used Santa Barbara Chocolates): The chocolate filling adds a layer of decadent indulgence to these bars without compromising their healthy nature. Using sugar-free chocolate chips is key to keeping these bars refined sugar-free. Santa Barbara Chocolates, as mentioned in the recipe, is a great option for high-quality sugar-free chocolate. Look for chocolate chips that are sweetened with sugar alternatives like stevia, erythritol, or monk fruit. Sugar-free chocolate chips allow you to enjoy the rich, satisfying taste of chocolate without the added sugar. Chocolate, especially dark chocolate, also contains antioxidants and can have mood-boosting effects. The bitterness of dark chocolate contrasts beautifully with the sweetness of the maple syrup and the warmth of the spices, creating a balanced and delicious flavor combination. If you can’t find sugar-free chocolate chips, you can use unsweetened baking chocolate and add a touch of your preferred sugar-free sweetener to taste when melting it.
- ¼ cup Coconut Oil: Coconut oil contributes to the smooth, melt-in-your-mouth texture of the chocolate filling. It helps the chocolate chips melt evenly and create a glossy, pourable glaze. Coconut oil, like coconut flour, contains MCTs and is a source of healthy fats. It also adds a subtle coconut flavor that complements the other ingredients. When choosing coconut oil, you can use either refined or unrefined coconut oil. Unrefined coconut oil will have a stronger coconut flavor, while refined coconut oil has a more neutral taste. For this recipe, either will work well, depending on your preference. Coconut oil solidifies when chilled, which helps the chocolate topping set firmly in the freezer, creating that perfect bar texture.
- ¼ cup Coconut Flakes: Coconut flakes are used as a topping, adding a delightful textural contrast and a hint of tropical flavor. They provide a slight chewiness and a visual appeal to the finished bars. Coconut flakes are also a source of fiber and healthy fats. You can use either sweetened or unsweetened coconut flakes, depending on your preference. Unsweetened coconut flakes will keep the bars completely refined sugar-free, while sweetened coconut flakes will add a touch of extra sweetness. Toasted coconut flakes can also be used for a richer flavor and a crispier texture. Toasting them is simple: just spread them on a baking sheet and bake at 350°F (175°C) for a few minutes until lightly golden brown, watching carefully to prevent burning.
Instructions
Creating these No Bake Turmeric Bars is incredibly straightforward and requires no oven time, making them perfect for warm weather or when you simply want a quick and easy treat. Follow these step-by-step instructions to bring these delicious bars to life:
- Prepare Your Pan: Start by lining a deep 8 x 8-inch pan with parchment paper. This is a crucial step for easy removal of the bars later. Ensure the parchment paper overhangs the sides of the pan – this will act as handles to lift the finished bars out cleanly. Set the prepared pan aside.
- Combine Dry Crust Ingredients: In a large mixing bowl, whisk together the dry ingredients for the crust: ¾ cup coconut flour, 3 scoops of Terra Origin Organic Turmeric Blend (Chai), and 1 tsp cinnamon. Whisking ensures that the ingredients are evenly distributed and any clumps of coconut flour are broken up, resulting in a smoother crust. Set this bowl aside.
- Melt Wet Crust Ingredients: In a microwave-safe bowl or a saucepan on the stovetop, combine 2 cups of almond butter and ½ cup of maple syrup. If using a microwave, heat in 30-second intervals, stirring in between, until the almond butter and maple syrup are melted and easily combined. Be careful not to overheat, as almond butter can become very runny. If using the stovetop, heat over low heat, stirring constantly, until melted and smooth. The goal is to create a warm, liquid mixture that will easily incorporate with the dry ingredients.
- Combine Wet and Dry Ingredients: Pour the melted almond butter and maple syrup mixture into the bowl with the dry ingredients. Mix everything together using a spatula or wooden spoon until a thick batter forms. Initially, it might seem a bit dry, but keep mixing – the coconut flour will absorb the moisture, and the mixture will come together into a workable dough. Don’t overmix, just combine until everything is incorporated.
- Press Dough into Pan: Transfer the thick dough to the prepared parchment-lined pan. Using your hands or the back of a spoon, press the dough firmly and evenly into the bottom of the pan. Ensure the crust is compacted and reaches all corners of the pan for a uniform base. A firm, even crust will provide a solid foundation for the chocolate topping.
- Refrigerate Crust: Place the pan with the pressed crust into the refrigerator and refrigerate for at least 30 minutes. This chilling time is essential as it allows the coconut flour to fully absorb the moisture and the almond butter to firm up, creating a stable crust that is easier to work with and will hold its shape when the chocolate topping is added.
- Prepare Chocolate Topping: While the crust is chilling, prepare the chocolate topping. In a heatproof bowl set over a saucepan of simmering water (or using a microwave in short intervals), combine 2 cups of sugar-free chocolate chips and ¼ cup of coconut oil. If using a double boiler, ensure the bottom of the bowl doesn’t touch the water. Heat gently, stirring occasionally, until the chocolate chips and coconut oil are completely melted and smooth. If using a microwave, heat in 30-second intervals, stirring in between, until melted. Be careful not to overheat the chocolate, as it can become grainy.
- Pour Chocolate Over Crust: Once the chocolate topping is melted and smooth, remove the pan with the chilled crust from the refrigerator. Pour the melted chocolate evenly over the crust, spreading it to the edges of the pan. Use a spatula to ensure a smooth and even chocolate layer.
- Add Toppings and Garnish: Immediately sprinkle ¼ cup of coconut flakes over the chocolate topping. Then, for an extra touch of flavor and visual appeal, sprinkle additional Terra Origin Organic Turmeric Blend and cinnamon over the coconut flakes. The toppings will adhere to the melted chocolate as it sets.
- Freeze to Firm: Transfer the pan to the freezer and freeze until the bars are firm, which will take at least 2-3 hours, or preferably overnight. Freezing is necessary to fully set the chocolate and make the bars easy to slice.
- Cut and Serve: Once the bars are completely frozen and firm, remove the pan from the freezer. Using the parchment paper overhang, lift the bars out of the pan onto a cutting board. Cut into 15 bars (or your desired size) using a sharp knife. For clean cuts, you can run the knife under hot water and wipe it dry between cuts.
- Store: Store the No Bake Turmeric Bars in an airtight container in the refrigerator or freezer. They will keep in the refrigerator for up to 5 days or in the freezer for up to a month. If storing in the freezer, let them thaw for a few minutes before serving for a slightly softer texture.

Additional Tips for Perfect Turmeric Bars
- Use Quality Almond Butter: The quality of your almond butter significantly impacts the taste and texture of these bars. Opt for 100% almond butter with no added oils, sugar, or salt. Freshly ground almond butter, if available, can also enhance the flavor.
- Adjust Sweetness to Taste: While ½ cup of maple syrup provides a balanced sweetness, you can adjust it to your liking. If you prefer a less sweet bar, start with ¼ cup and taste the crust mixture before pressing it into the pan. You can always add a little more if needed.
- Don’t Skip the Refrigeration and Freezing: The refrigeration time for the crust and the freezing time for the final bars are crucial for the texture and stability. These steps allow the coconut flour to hydrate properly and the fats to solidify, resulting in bars that hold their shape and are easy to cut.
- Customize Your Toppings: Feel free to get creative with your toppings! Instead of coconut flakes, you could use chopped almonds, pecans, pumpkin seeds, cacao nibs, or a drizzle of melted almond butter. A sprinkle of sea salt on top of the chocolate can also enhance the flavor.
- Make Ahead and Store: These bars are perfect for making ahead of time. They store beautifully in the refrigerator for up to 5 days or in the freezer for longer storage. This makes them a great option for meal prep or when you need a healthy dessert on hand. Freezing also helps them maintain their firm texture.
Frequently Asked Questions (FAQ)
Q1: Can I substitute coconut flour?
A: Coconut flour is quite unique due to its high absorbency. Substituting it directly with other flours like almond flour or oat flour will likely result in a different texture and may require adjustments to the liquid ingredients. If you must substitute, almond flour might be the closest option, but you will likely need to reduce the amount and possibly add a bit more liquid to achieve the right consistency for the crust. Experimentation may be needed.
Q2: I don’t have Terra Origin Organic Turmeric Blend. Can I use regular turmeric powder?
A: Yes, absolutely! If you don’t have the specific blend, you can use regular turmeric powder. Start with 2-3 teaspoons of plain turmeric powder for the crust. To mimic the “Chai” flavor, you can add a pinch each of ground ginger, cinnamon, cardamom, and cloves. Adjust the spices to your taste preference. Remember to also use extra turmeric for garnish if desired.
Q3: Can I use a different nut butter instead of almond butter?
A: Yes, you can substitute almond butter with other nut butters like cashew butter, peanut butter (if not concerned about peanut allergies), or sunflower seed butter (for a nut-free option). Keep in mind that each nut butter has a distinct flavor, so the overall taste of the bars will be slightly different. Cashew butter will be milder, while peanut butter will be more pronounced. Sunflower seed butter is a great allergy-friendly alternative.
Q4: Can I make these bars vegan?
A: Yes, this recipe is already naturally vegan! All the ingredients are plant-based and free from animal products. Ensure your sugar-free chocolate chips are also vegan, as some may contain dairy. The recipe is naturally dairy-free and egg-free as written.
Q5: How long do these bars last?
A: These No Bake Turmeric Bars will last for up to 5 days when stored in an airtight container in the refrigerator. For longer storage, you can freeze them for up to a month. Freezing is a great way to keep them fresh and ready to enjoy whenever you crave a healthy and delicious treat. When frozen, they can be enjoyed straight from the freezer for a firmer texture or thawed slightly in the refrigerator for a softer bite.
