These Pull-Apart BBQ Chicken Sliders have become something of a legend in my household. I first made them for a casual Sunday gathering, thinking they’d be a simple, crowd-pleasing appetizer. Little did I know they’d steal the entire show! My kids, usually picky eaters, devoured them faster than I could get them out of the baking dish. My husband, a self-proclaimed BBQ connoisseur, declared them “absolutely perfect.” The magic lies in the combination of tender, flavorful shredded chicken coated in tangy BBQ sauce, gooey melted cheese, and soft, sweet rolls brushed with savory garlic butter. They are incredibly easy to whip up, making them my go-to for everything from game days and potlucks to quick weeknight dinners when I need something satisfying without spending hours in the kitchen. The aroma alone, wafting from the oven as the cheese melts and the garlic butter toasts the buns, is enough to make everyone gather in anticipation. Trust me, this recipe isn’t just food; it’s an experience – a guaranteed hit that brings smiles and satisfies cravings every single time.

Ingredients

This recipe relies on simple, readily available ingredients that combine to create layers of flavor. Here’s a detailed look at what you’ll need:

  • 2 Tablespoons (30 ml) Olive Oil: Used for sautéing the onions and garlic, providing a flavorful base. Extra virgin olive oil adds a nice fruity note, but regular olive oil or even canola or vegetable oil will work perfectly fine.
  • 1 Small Red Onion, Sliced: Red onions offer a milder, slightly sweeter flavor compared to yellow or white onions and add a lovely pop of color. Slice them relatively thinly so they soften quickly and distribute evenly throughout the chicken mixture. If you prefer a stronger onion flavor, a yellow onion can be substituted. Shallots would also lend a delicate flavor.
  • 3 Cloves Garlic, Minced: Fresh garlic provides the best aromatic punch. Mince it finely to ensure it incorporates well and releases its full flavor without overpowering the dish. Feel free to adjust the amount based on your love for garlic – add an extra clove or two if you’re a garlic enthusiast! Garlic powder can be used in a pinch (about 3/4 teaspoon), but fresh is highly recommended.
  • 2 1/2 Cups (350 g) Shredded Roast Chicken: This is the star of the sliders! Using pre-cooked shredded roast chicken (like from a rotisserie chicken) is a fantastic time-saver and adds a depth of flavor that comes from the roasting process. However, you have flexibility here!
    • Rotisserie Chicken: The easiest option. Simply pull the meat from the bones and shred it.
    • Home-Cooked Chicken: You can easily cook chicken specifically for this recipe. Poach 2-3 boneless, skinless chicken breasts or thighs until cooked through, then shred with two forks. Grilling or BBQing the chicken beforehand, as mentioned in the original notes, will impart an extra layer of smoky flavor which is fantastic. You can even use leftover baked or grilled chicken. Both white and dark meat work well, or a combination of the two.
    • Slow Cooker/Instant Pot Chicken: Cooking chicken breasts or thighs in a slow cooker or Instant Pot with a little broth or water until tender makes shredding effortless.
  • 1/2 Teaspoon (2.5 ml) Smoked Paprika: This spice is key for adding a subtle, smoky depth that complements the BBQ sauce beautifully. It’s different from regular or sweet paprika, so ensure you’re using the smoked variety for that signature flavor.
  • 1 Tablespoon (15 ml) Worcestershire Sauce: This fermented condiment adds a complex umami savoriness that enhances the overall flavor profile of the chicken mixture. It brings depth and a slight tang.
  • 1 Cup (286 g) BBQ Sauce: Choose your favorite! The type of BBQ sauce you use will significantly impact the final taste. Consider:
    • Sweet & Tangy: Kansas City style sauces are popular choices.
    • Vinegar-Based: Carolina style sauces offer a sharper tang.
    • Smoky & Rich: Look for sauces with hickory or mesquite notes.
    • Spicy: Many brands offer spicy variations if you like some heat.
    • Homemade: If you have a beloved homemade BBQ sauce recipe, absolutely use it! Feel free to adjust the amount slightly based on how saucy you like your sliders.
  • Salt to Taste: Essential for bringing out all the flavors. Add gradually, especially since the roast chicken, BBQ sauce, and Worcestershire sauce already contain salt. Taste the mixture before adding too much. Kosher salt or sea salt often provide a cleaner flavor than table salt.
  • Black Pepper to Taste: Freshly ground black pepper offers the best flavor. Add according to your preference for a little warmth and spice.
  • 12 Dinner Rolls or Hawaiian Rolls (1 package): The vessel for all the deliciousness! Hawaiian rolls are a classic choice for sliders due to their slight sweetness and incredibly soft texture, which contrasts wonderfully with the savory filling. Standard soft dinner rolls or potato rolls also work beautifully. The key is to buy the kind that are baked together in a slab so you can slice them horizontally as one unit.
  • 12 Slices American Cheese or Cheddar Cheese OR 2 cups (480 ml) Shredded Cheese: Cheese brings creaminess and binds the sliders together.
    • American Cheese: Melts exceptionally well, creating that classic gooey texture.
    • Cheddar Cheese: Offers a sharper, more distinct cheese flavor. Mild, medium, or sharp cheddar all work, depending on your preference.
    • Other Options: Provolone, Monterey Jack, or Pepper Jack (for a kick) are also excellent choices.
    • Sliced vs. Shredded: Sliced cheese is easy to layer. Shredded cheese melts very evenly and gets into all the nooks and crannies. Using 2 cups (about 8 ounces) of shredded cheese is equivalent to roughly 12 slices. You can even mix different types!

GARLIC PARSLEY BUTTER: This topping takes the sliders from great to unforgettable, adding richness and flavor to the buns.

  • 1/4 Cup (60 g) Butter (1/2 stick): Use salted or unsalted butter. If using salted, you might not need any additional salt in the butter mixture itself. Real butter provides the best flavor.
  • 2 Cloves Garlic, Minced: Again, fresh minced garlic is preferred for its potent flavor that infuses the butter beautifully. Ensure it’s minced very finely.
  • 2 Teaspoons (10 ml) Minced Parsley: Fresh parsley adds color and a touch of fresh, herbaceous flavor that cuts through the richness. Curly or flat-leaf parsley works. Dried parsley can be substituted (use about 3/4 teaspoon), but fresh offers a brighter taste and look.

Instructions

Follow these simple steps to assemble your irresistible Pull-Apart BBQ Chicken Sliders:

  1. Preheat Oven & Prepare Dish: Begin by preheating your oven to 350°F (175°C). This ensures the oven is at the correct temperature when the sliders go in, allowing them to cook evenly and the cheese to melt perfectly. Generously coat a 9×13 inch baking dish with non-stick cooking spray. This prevents the bottom buns from sticking and makes cleanup much easier. If you don’t have cooking spray, lightly greasing the dish with butter or oil will also work.
  2. Make Garlic Parsley Butter: In a small microwave-safe bowl, combine the butter (cut into smaller pieces for faster melting), the finely minced garlic, and the minced fresh parsley. Microwave on high in 20-30 second intervals, stirring in between, until the butter is completely melted and the garlic becomes fragrant. Be careful not to burn the garlic. Alternatively, you can melt the butter with the garlic and parsley in a small saucepan over low heat. Once melted, give it a good stir and set it aside. This allows the flavors to meld while you prepare the filling.
  3. Sauté Aromatics: Place a large skillet or frying pan over medium heat. Add the olive oil and let it heat up for a moment until it shimmers slightly. Add the sliced red onion to the hot oil. Cook, stirring occasionally, for about 2-3 minutes, or until the onions soften, become translucent, and lose their raw bite. Add the minced garlic to the skillet and cook for another 30 seconds, stirring constantly, just until the garlic becomes fragrant. Be vigilant during this step, as minced garlic can burn quickly, which would add a bitter taste.
  4. Combine BBQ Chicken Filling: Add the shredded roast chicken to the skillet with the cooked onions and garlic. Stir it in, breaking up any large clumps. Sprinkle in the smoked paprika, pour in the Worcestershire sauce, and add your chosen BBQ sauce. Stir everything together thoroughly until the chicken is evenly coated in the sauce and spices. Continue to cook over medium heat for about 2-3 minutes, stirring occasionally, until the mixture is heated through completely. Now is the crucial time to taste the filling. Season with salt and freshly ground black pepper according to your preference. Remember that different BBQ sauces have varying salt levels, so taste before adding too much salt. The mixture should be saucy but not overly wet.
  5. Assemble the Sliders: Carefully slice the entire slab of dinner rolls or Hawaiian rolls in half horizontally using a long serrated knife (like a bread knife). Keep the tops and bottoms connected as single units. Place the entire bottom half of the rolls into the prepared 9×13 inch baking dish, cut-side up. Arrange half of your chosen cheese (either 6 slices or 1 cup of shredded cheese) evenly over the bottom buns. This bottom layer of cheese acts as a delicious barrier, helping to prevent the buns from becoming soggy from the chicken mixture.
  6. Layer the Filling and More Cheese: Spoon the warm BBQ chicken mixture evenly over the cheese layer on the bottom buns. Spread it out gently to cover the entire surface, reaching the edges. Layer the remaining half of the cheese (the other 6 slices or 1 cup shredded) evenly over the top of the chicken mixture.
  7. Add Top Buns and Garlic Butter: Carefully place the top half of the rolls onto the cheese-covered chicken filling, aligning it with the bottom half. Now, take the reserved garlic parsley butter (give it another stir if needed) and brush it generously over the tops and sides of the slider buns. Use a pastry brush to ensure even coverage, making sure to get some of the minced garlic and parsley onto each bun. Don’t skip this step – it adds incredible flavor and helps the tops get golden brown and slightly crisp.
  8. Bake to Perfection: Place the baking dish into the preheated 350°F (175°C) oven. Bake for 10-15 minutes. You’re looking for the cheese to be fully melted, bubbly, and gooey, and the tops of the buns to be lightly golden brown and heated through. Keep an eye on them towards the end of the baking time; if the tops start to brown too quickly before the cheese is perfectly melted, you can loosely tent the dish with aluminum foil for the remaining few minutes.
  9. Serve Warm: Once baked, carefully remove the dish from the oven. Let the sliders rest for a minute or two – they will be very hot! The beauty of these sliders is the “pull-apart” nature. You can serve them directly from the baking dish, allowing guests to pull apart individual sliders. Alternatively, you can use a spatula to lift the entire slab onto a cutting board and slice them into individual portions if preferred. Serve immediately while they are warm, gooey, and at their most delicious.

Preparation Time

This recipe is designed to be quick and efficient, perfect for busy schedules or easy entertaining:

  • Prep Time: 10 minutes. This includes slicing the onion, mincing the garlic and parsley, measuring ingredients, and assembling the sliders before baking. Using pre-shredded rotisserie chicken significantly speeds up this step. If you need to cook and shred the chicken from scratch, factor in additional time for that process.
  • Cook Time: 20 minutes. This accounts for sautéing the aromatics, heating the chicken mixture (approx. 5 minutes), and baking the assembled sliders (10-15 minutes).
  • Total Time: 30 minutes. From start to finish, you can have these hot, cheesy sliders ready to serve in about half an hour, making them an ideal choice for a fast and flavorful meal or appetizer.

    • If transferring to a platter, arrange them neatly for an attractive presentation.

Additional Tips

Elevate your slider game with these extra pointers:

  1. Chicken Variations for Flavor: While rotisserie chicken is convenient and flavorful, don’t hesitate to cook chicken specifically for this. Grilling or smoking boneless, skinless chicken thighs or breasts before shredding adds an incredible layer of authentic BBQ flavor that permeates the meat. Season the chicken well before cooking it for maximum impact. Even poaching chicken in seasoned broth adds more depth than plain boiled chicken.
  2. Sauce Customization is Key: Don’t just settle for BBQ sauce straight from the bottle (unless it’s one you absolutely adore!). Taste your sauce and feel free to customize it. Add a dash of hot sauce for heat, a teaspoon of apple cider vinegar for extra tang, a drizzle of honey or brown sugar for more sweetness, or a drop of liquid smoke (use sparingly!) to enhance smokiness, especially if you didn’t grill the chicken. Warming the sauce slightly before adding the chicken can help the flavors meld better.
  3. Cheese Choices & Layering: Think beyond standard cheddar or American. Smoked Gouda or smoked Provolone can amplify the smoky notes. Pepper Jack adds a welcome kick of spice. For ultimate meltiness and flavor, try layering two different types – perhaps a base of Provolone for structure and a topping of shredded sharp cheddar for flavor punch. Ensure the cheese covers the chicken well to get cheesy goodness in every bite.
  4. Make-Ahead Strategy: These sliders are fantastic for prepping ahead! You can fully assemble the sliders (layers of buns, cheese, chicken mixture, cheese, top buns) in the baking dish, cover it tightly with plastic wrap or foil, and refrigerate for up to 24 hours. Crucially, wait to make and brush the garlic parsley butter on top until just before baking. When ready to bake, remove the dish from the fridge while the oven preheats. Brush with the freshly prepared garlic butter and bake as directed, potentially adding 5-10 minutes to the baking time since they are starting cold, ensuring the center is hot and the cheese is fully melted.
  5. Achieving the Perfect Golden Top: The garlic parsley butter is essential for flavor and browning, so brush it on generously, ensuring you cover the tops and even let some drip down the sides slightly. For an extra visual appeal and slight crunch, consider sprinkling a tiny bit of flaky sea salt, sesame seeds, or poppy seeds over the buttered tops before baking. If you notice the tops getting too dark before the cheese inside is perfectly melted, loosely tent the dish with aluminum foil for the remainder of the baking time.

FAQ Section

Here are answers to some frequently asked questions about these Pull-Apart BBQ Chicken Sliders:

  1. Q: Can I use a different type of meat besides chicken?
    • A: Absolutely! These sliders are very adaptable. Pulled pork is a fantastic and classic substitution – simply use pre-cooked pulled pork or make your own, mix it with the BBQ sauce and seasonings, and assemble as directed. Shredded beef (like leftover pot roast or brisket) also works wonderfully. You could even use ground beef cooked sloppy joe style or seasoned taco meat for different flavor profiles. For a vegetarian option, shredded jackfruit (cooked and seasoned) or even a hearty mushroom and lentil mixture could be used as a filling. Adjust seasonings accordingly based on your chosen protein.
  2. Q: How do I store and reheat leftovers?
    • A: Store any leftover sliders in an airtight container in the refrigerator. They should keep well for 3-4 days. To reheat, the oven or a toaster oven is generally best to help the buns regain some crispness. Place sliders on a baking sheet in a preheated 325°F (160°C) oven for about 8-12 minutes, or until heated through and the cheese is re-melted. You can cover loosely with foil if the tops start getting too dark. Microwaving is faster but can make the buns softer or slightly chewy – heat in short intervals until warm.
  3. Q: Can I freeze these sliders?
    • A: Yes, you can freeze these sliders either baked or unbaked, although the texture of the buns might change slightly upon thawing.
      • To freeze unbaked: Assemble completely (but hold the garlic butter topping). Wrap the entire dish tightly in plastic wrap, then cover with aluminum foil or place in a large freezer bag. Freeze for up to 2-3 months. Thaw overnight in the refrigerator before adding the garlic butter and baking as directed (adding extra time if still cold).
      • To freeze baked: Let the baked sliders cool completely. Wrap the dish tightly as described above, or wrap individual sliders well. Freeze for up to 2-3 months. Reheat from frozen (covered with foil) in a 325°F (160°C) oven until heated through (this may take 20-30 minutes), or thaw overnight in the fridge first for faster reheating.
  4. Q: My slider buns got soggy on the bottom. What did I do wrong?
    • A: Soggy bottoms can happen for a few reasons. First, ensure your BBQ chicken mixture isn’t excessively wet; if it seems very liquidy, let it simmer a bit longer to thicken slightly or drain off some excess sauce before assembling. Second, the bottom layer of cheese is crucial as it creates a barrier – make sure you have good coverage. Third, don’t let the assembled sliders sit too long at room temperature before baking, especially with warm filling. Finally, ensure you bake them long enough for the bottom buns to get slightly toasted. Using slightly sturdier rolls (like potato rolls vs very soft white rolls) might also help.
  5. Q: What are the best kind of rolls to use for these sliders?
    • A: The most popular choice is typically Hawaiian rolls because their slight sweetness pairs perfectly with the savory and tangy BBQ chicken, and their soft texture is ideal for sliders. However, standard soft dinner rolls (often sold in pull-apart sheets) work great too and offer a more neutral flavor. Potato rolls are another excellent option, offering a soft texture and slightly richer flavor. Brioche slider buns can also be used for a richer, buttery taste, though they might be slightly larger or need to be sourced in a connected sheet format for the true pull-apart method. The key is choosing a soft roll that comes connected in a pack, allowing you to slice the entire “slab” horizontally.
