- Bake the Crust: Place the pan in the preheated oven. Bake for 8-10 minutes. Keep a close eye on it, as coconut flour can brown quickly. You’re looking for the edges to be lightly golden brown and the surface to appear set and dry. It might seem slightly soft in the center but will firm up as it cools.
- Cool Completely: Remove the crust from the oven and carefully slide the parchment paper (with the crust still on it) onto a wire rack. - Refrigerate: Cover the bowl of whipped coconut cream and place it back in the refrigerator until you are ready to assemble the fruit pizza. This helps it stay firm. It can be made a few hours ahead. If it seems too soft after storing, you might be able to whip it briefly again to fluff it up.
Part 3: Assemble the Fruit Pizza
- Ensure Crust is Cool: Double-check that your shortbread crust is completely cool to the touch.
- Spread the Whipped Cream: Retrieve the chilled coconut whipped cream from the refrigerator. Gently spread it evenly over the top of the cooled shortbread crust, leaving a small border around the edge if desired. Use an offset spatula or the back of a spoon for a smooth finish.
- Arrange the Fruit: Now for the fun part! Begin topping the whipped cream layer with your prepared fresh fruit. You can create patterns (concentric circles are popular), make a beautiful mosaic, or arrange it more randomly. Consider colour, shape, and texture contrasts. Place larger slices first, then fill in gaps with smaller fruits like berries. Patting the fruit relatively dry before placing helps prevent excess moisture from seeping into the cream.
- Add Optional Garnishes: If using, sprinkle edible flowers artfully over the fruit or tuck in small sprigs of fresh mint leaves for colour and aroma.
- Chill Before Serving: For the best flavour and texture, and to allow the cream to set slightly with the fruit, it’s ideal to refrigerate the assembled fruit pizza for at least 15-30 minutes before slicing and serving.
- Serve: Slice the fruit pizza into 8-10 wedges using a sharp knife. Serve immediately. Keep any leftovers refrigerated.
