2. Prepare the Vegetables:

  • Wash all the vegetables thoroughly.

  • Pick the fresh mint and cilantro leaves from their stems.

  • Start with a bed of lettuce, then add a small bundle of vermicelli noodles, followed by julienned carrots, cucumbers, bell peppers, avocado (if using), mint leaves, and cilantro leaves. Don’t overfill the wrapper, as it will be difficult to roll and may tear.
  • To roll, fold the bottom edge of the rice paper wrapper over the fillings, tucking it in snugly.
  • Fold in the sides of the wrapper, like you’re rolling a burrito.
  • Continue rolling tightly from the bottom up until you reach the top edge, sealing the roll.
  • Place the finished spring roll on a serving platter or a slightly damp plate to prevent sticking.
  • Repeat the process with the remaining rice paper wrappers and fillings.

5. Serving and Storage:

  • Serve the veggie spring rolls immediately for the best texture and freshness, accompanied by the peanut dipping sauce.
